Cam which settings did you adjust to tame it down, will be looking at doing something like that myself,

Kev, you have some boxes in the right hand corner in Cleanflight PID tuning menu.
Roll rate, Pitch Rate and Yaw rate.
The higher the number the more agile, lower it to make things more docile.
I have mine set to 0.60 cause I like things to spin fast :)

Lol. I find anything below 65 too slow.
At the moment I'm running 65 roll and 70 pitch with a touch of expo in my tx just to soften it up around center.

Kev, the only think I adjusted is the yaw rate which is 0.70.
Roll and pitch is still the stock setting of 0.00.
In the DX8 I have the D/R on ELE, AIL and Rudder at 125.
Expo is 30 on the ELE and AIL and minus 50 on the rudder to speed it up a bit more.

Be careful with the yaw rate it can sometime cause strange behavior, if it does cause anything weird put it back to stock settings and add negative expo like Cam said.

I had a chat the other night with a guy who flies in angle and horizon only.No acro mode ever. And he races and said acro is just for flipping not racing? Food for thought :)

As far as I am concerned Acro is the only way to fly.
Angle and Horizon are like training wheels on a bicycle.
The sooner you take them off the better.
Look at the top guys like Charpu, Boris B, metaldanny, vegetoast1.
They all fly Acro, there must be a reason for that. :)
